Bob Blanton's Starship Sakira/Delphi in Space series generates two sentient AIs. Both become sentient by helping human children.
Scott Jucha's Silver Ship Series (read order: Pyreans, Silver Ships, Axis Crossing) has sentient AIs called SADEs, who have human empathy. The Silver Ships series also shows what can happen if you don't do this.
Microsoft had to pull the plug on "Tay" after it went to the dark side. The programmers didn't inoculate Tay with human empathy.
